Watermelon And Mint Granita - cooking recipe
Ingredients

1 cup granulated sugar
3 sprigs fresh mint + extra, to garnish
3 1/2 lb watermelon, coarsely chopped, pureed, strained
Preparation

Combine sugar and 2 cups water in a medium saucepan. Stir over low heat, without boiling, until sugar dissolves. Bring to a boil. Add mint sprigs, reduce heat and simmer, without stirring, for 5 mins. Add watermelon puree. Transfer to 2 shallow metal pans, cover with foil and freeze for around 3 hours, or until almost set.
Using a fork, scrape granita from bottom and sides of pans, mixing the frozen with the unfrozen mixture. Cover and return to the freezer until frozen.
To serve, use a fork to scrape granita into large ice crystals. Spoon into glasses and serve immediately.
