Chili Lemon Chicken With Pumpkin And Potatoes - cooking recipe

Ingredients
    4 tbsp butter, at room temperature
    2 None lemons, zested, 1 juiced, 1 sliced
    1 tsp chili and garlic paste
    1 None chicken, about 5 lbs, butterflied
    4 None large potatoes, peeled, quartered
    3/4 lb pumpkin, cut into wedges
    None None salad greens, to serve
Preparation
    Preheat oven to 400\u00b0F. In a small bowl, combine butter, lemon zest and chili and garlic paste. Season to taste and mix well. Rub all over the skin of the chicken.
    Arrange lemon slices in a large roasting pan and top with chicken, skin side up. Mix lemon juice with 1/2 cup water and pour on top. Arrange potatoes and pumpkin around chicken. Roast, basting regularly, 1 hour, or until juices run clear when a skewer is inserted into thickest part of chicken thigh. Cut chicken into pieces and drizzle with pan juice. Serve with potatoes, pumpkin and salad greens.
