Lemony Chicken Saltimbocca - cooking recipe

Ingredients
    4 (6 oz) chicken breast fillets
    4 slices prosciutto
    4 thick slices lemon
    1 tbsp flour
    1 tbsp olive oil
    1/2 cup dry white wine
    1 1/2 tbsp butter, chilled
    6 oz salad greens, to serve
Preparation
    Season chicken then wrap a slice of prosciutto around each fillet. Top with a slice of lemon and secure with a toothpick. Coat in flour, shaking off excess.
    Heat oil in a large frying pan over medium heat. Working in batches, cook chicken for 4-5 mins per side, until cooked through. Set chicken aside. Deglaze pan with wine, scraping up browned bits. Increase heat to high and boil for 2 mins, until reduced by 1/2. Whisk in butter.
    Remove toothpicks from chicken and slice. Arrange salad on serving plates then top with chicken. Drizzle sauce over top to serve.
