Chicken And Mixed Berry Salad With Strawberry Vinaigrette - cooking recipe

3 tbsp olive oil
2 None chicken breast fillets, trimmed
3.5 oz baby spinach
4 oz raspberries
5 oz blueberries
5 oz feta cheese, crumbled
1/4 cup fresh mint leaves
1 None small red onion, thinly sliced
4.5 oz strawberries, hulled, chopped
2 tbsp apple cider vinegar
1 tsp honey
1 tsp Dijon mustard
1/4 cup sliced almonds, toasted
Preparation

Heat 1 tbsp oil in a large frying pan over high heat. Cook chicken for 4-5 mins per side, until browned and cooked through. Let cool then slice thinly.
In a large bowl, combine chicken, spinach, raspberries, blueberries, feta, mint and onion. Set aside.
For the strawberry vinaigrette, puree strawberries, vinegar, honey, mustard and remaining oil until smooth. Season then drizzle over salad. Add toasted almonds and toss to combine.
