Spiced Jam For Ham - cooking recipe

Ingredients
    1 None cinnamon stick
    3 None cardamom pods
    3 None whole cloves
    10.5 oz fresh cherries, seeded
    1 None medium Spanish onion, finely chopped
    1/2 cup apple cider vinegar
    1/3 cup light brown sugar
    1/3 cup dried currants
    1 tbsp finely chopped candied ginger
    1 tsp yellow mustard seeds
Preparation
    Secure cinnamon, cardamom and cloves in cheesecloth.
    In a large saucepan, bring spice sachet and remaining ingredients to a boil. Reduce heat and simmer, covered, for 30 mins, or until fruit is soft. Uncover and boil rapidly for 5 mins, or until jam is thick. Discard spice sachet.
