Strawberry And Almond Butter Cake - cooking recipe

1/2 pack vanilla pudding mix
1 1/4 cups milk
2 1/4 cups plus 2 tbsp sugar
2 1/2 cups butter, softened
1 tsp vanilla extract
8 medium eggs
4 cups flour
2 tsp baking powder
2 1/4 lbs strawberries, roughly chopped
1/2 cup sliced almonds

To make the sauce: Mix the pudding mix with 3 tbsp of the milk and 2 tbsp sugar to make a paste. Warm the rest of the milk in a pan and bring to a boil. Remove from the heat and mix in the paste, then bring to a boil again and simmer for 1-2 mins. Pour into a bowl, cover with cling wrap and cool.
Preheat the oven to 375\u00b0F. Using an electric hand mixer cream 2 1/4 cups of the butter with 2 cups of the sugar and the vanilla until light and fluffy. Beat in the eggs one at a time, then add the flour and baking powder. Fold in the strawberries. Spread the mixture in a 13 x 15 inch baking dish lined with parchment paper and smooth the top. Make indentations in the surface and fill these with pieces of the remaining butter. Sprinkle the almonds and the rest of the sugar on top, then bake for 40-45 mins. Cool on a wire rack then remove from the pan and cut into squares. Serve with the sauce.
