Carribean Burgers With Mango Salsa - cooking recipe

Ingredients
    2 lbs ground beef
    4 tbsp breadcrumbs
    1 tbsp prepared fried onions
    1-2 tsp mustard
    1 None egg
    1 tsp dried thyme
    1/2 tsp garlic powder
    1/2 tsp cayenne pepper
    1/2 tsp cinnamon
    1/2 tsp grated nutmeg
    6 tbsp mayonnaise
    3 tbsp mango chutney
    1/2 None mango, peeled and finely diced
    1/2 None red bell pepper, cut into cubes
    1 None green onion, sliced
    1 clove garlic, minced
    1 None lime, zested and juiced
    4 sprigs cilantro, finely chopped
    1 None cucumber, thinly sliced
    12 None cherry tomatoes, halved
    1/2 None red onion, peeled and cut into very thin rings
    4 tbsp oil
    2 tbsp white wine vinegar
    6 None hamburger buns
    6 None lettuce leaves
    12 None small dill pickles
    6 None red chilies, for garnish
Preparation
    For the burgers, knead together the ground beef, breadcrumbs, 4 tbsp water, fried onions, mustard and egg. Season with salt, pepper, thyme, garlic, cayenne pepper, cinnamon and nutmeg. Form the mixture into 6 patties and chill. Mix the mayonnaise and chutney together and set aside.
    For the mango salsa, mix the mango, peppers, green onions, garlic, lime zest and juice, and cilantro. Season to taste.
    For the tomato salad, mix the cucumber, tomatoes and red onion. Mix the oil and vinegar, beat vigorously and drizzle the dressing on to the salad. Season to taste.
    Heat 2 tbsp of oil in a frying pan and fry the burgers for 15 mins until golden, turning as necessary. Cut the rolls in half and spread them with mayonnaise-chutney mixture. Put a lettuce leaf on each, followed by a hamburger, some mango salsa and the top half of the roll. Attach the pickles to the top of the rolls with wooden skewers. Serve with the cucumber and tomato salad garnished with 1 chili pepper.
