Smoked Salmon And Avocado Sushi Rolls - cooking recipe

Ingredients
    2 oz sushi rice, rinsed
    2 tbsp sushi seasoning
    4 sheets nori, halved
    3.5 oz smoked salmon
    1/2 None small avocado, pitted, thinly sliced
    None None soy sauce, to serve
Preparation
    Combine rice and 3/4 cup water in a medium saucepan. Bring to a boil then reduce heat and simmer, covered, for 12-15 mins. Remove from heat and let stand, covered, for 10 mins.
    Spread rice out over a baking tray. Drizzle sushi seasoning evenly over rice then turn rice with a spatula to mix seasoning in. Let cool completely.
    Lay out a sheet of nori on a bamboo mat, shiny-side down, with short side facing upwards.
    Using wet fingers, gently press 1/2 cup rice over sheet, leaving a 3/4 inch strip at 1 end. Make a ridge along middle of rice with your fingers. Top with salmon and avocado. Roll up tightly using the bamboo mat. Repeat with remaining nori, rice and filling.
    Wrap in plastic wrap and chill until firm. Cut each roll into 8 pieces. Serve with soy sauce.
