Speedy Spinach Cannelloni - cooking recipe

Ingredients
    1 tsp vegetable or olive oil
    1 None Spanish onion, finely chopped
    2 cloves garlic, minced
    1 (13.5 oz) can diced tomatoes
    9 oz frozen spinach, thawed, excess water squeezed out
    18 oz fresh reduced-fat ricotta cheese
    6 None thin wheat wrappers, halved lengthwise
    1/3 cup grated reduced-fat Cheddar cheese
    None None mixed greens, to serve
Preparation
    Preheat oven to 400\u00b0F. Grease a large baking dish.
    Heat oil in frying pan over medium heat. Cook onion and garlic for 5 mins. Add tomatoes. Bring to a boil then remove from heat.
    Meanwhile, combine spinach and ricotta. Divide into 12 portions. Spoon 1 portion along edge of each wrap and roll up to enclose filling. Place side by side in prepared dish. Spoon tomato sauce over rolls and sprinkle with cheese. Bake for 15 mins, or until heated through and cheese has melted. Serve with mixed greens.
