Cajun Blackened Fish With Green Pepper Rice - cooking recipe

Ingredients
    6 tbsp butter
    1 None green pepper, finely chopped
    10.5 oz basmati rice, rinsed, drained
    3 cups chicken stock
    9 None green onion, finely chopped
    1 tbsp lemon juice
    4 (7 oz) white fish steaks
    1 tbsp Cajun spice mix
    1 tbsp fresh flat-leaf parsley leaves, finely chopped
    1 tsp cracked black pepper
Preparation
    Heat 1 1/2 tbsp butter in a medium saucepan over medium heat. Cook pepper, stirring, until softened. Add rice and stock. Bring to a boil then reduce heat, cover and simmer for 12 mins, or until cooked to your liking.
    Meanwhile, combine remaining butter, 1 green onion and lemon juice. Reserve 1/2. Brush remaining over fish then sprinkle with spice mix.
    Oil a large frying pan over medium-high heat. Cook fish until blackened on both sides and just cooked through.
    Stir extra onions, parsley and pepper into rice.
    Serve fish with rice and reserved butter mixture.
