Tomato, Basil And Crispy Caper Pasta - cooking recipe
Ingredients

1/2 cup vegetable oil
2 tsp capers, drained, rinsed, dried
1/2 cup fresh basil leaves, plus extra to serve
4 None tomatoes, halved horizontally, 2 deseeded and grated
3 tsp garlic-infused extra-virgin olive oil
12 oz angel hair pasta
2 oz Parmesan cheese, grated
Preparation

Heat oil in small saucepan over medium-high heat. Cook capers in hot oil for 1 min, until crispy. Remove with slotted spoon and drain on paper towels. Add 1/4 cup basil and fry for 20 seconds, until translucent. Remove with slotted spoon and drain on paper towels.
Combine grated tomatoes, remaining basil and garlic-infused oil. Season.
Meanwhile, cook pasta in boiling salted water until al dente. Drain and toss with tomato mixture. Let stand for 1 min then fold in 1 oz Parmesan. Distribute between serving bowls and top with capers, fried basil leaves and remaining Parmesan.
