No-Bake Chocolate Peanut Bars - cooking recipe

Ingredients
    6 oz crispy rice cereal
    1 1/4 cups powdered sugar, sifted
    4 oz desiccated coconut
    3 oz dry roasted peanuts, chopped, plus extra to decorate
    1/3 cup cocoa powder, sifted
    1 cup coconut oil
    12 oz crunchy peanut butter
    None None Topping
    8 oz dark chocoloate, chopped
    3 1/2 tbsp butter, chopped
Preparation
    Lightly grease and line an 8 x 12 inch baking dish with parchment paper, extending it 2 inches above the long sides. Combine cereal, powdered sugar, coconut, peanuts and cocoa powder in a bowl and mix well. In a medium saucepan, melt coconut oil on low. Cool 10 mins. Stir in peanut butter. Make a well in cereal mixture and add coconut oil mixture. Press firmly into prepared dish and chill until firm.
    Meanwhile for the topping, combine chocolate and butter in a heatproof bowl. Place over a saucepan of gently simmering water. Stir until melted. Pour evenly over chilled cereal mixture. Sprinkle with extra chopped peanuts. Chill until set and cut into squares to serve.
