Prune Cake - cooking recipe
Ingredients

16 None prunes, pitted, soaked in hot water for 1 hour, drained
4 None large eggs, separated
1 cup granulated sugar
1 tsp vanilla extract
1 cup unsalted butter, softened
2 1/4 cups self-rising flour, sifted
1/2 tsp salt
None None whipped cream, to serve
Preparation

Preheat oven to 350\u00b0F. Grease an 11x8 inch baking tray and line base and sides with parchment paper, extending paper 3/4 inch above edges.
Whisk egg yolks, sugar and vanilla extract until pale and thick. Gradually add butter, beating constantly. Fold in flour and salt. Whip egg whites to firm peaks then gently fold in. Transfer to prepared pan and top with plumped prunes. Bake for 35-40 mins, until firm to the touch. Let cool in pan for 5 mins then transfer to a wire rack to cool completely.
Serve warm or cool with whipped cream.
