Salmon, Lemon And Asparagus Stir Fry - cooking recipe
Ingredients

2 tbsp olive oil
8 oz asparagus, trimmed and cut into 2-inch lengths
1 bunch green onions, trimmed and cut into 2-inch lengths
8 oz broccoli florets
1/2 None small head cabbage, shredded
1 tbsp sesame seeds
1 None lemon, peel cut into thin strips and lemon juiced
12 oz salmon fillet, cut into bite-size pieces
1 tub (8 oz) creme fraiche
Preparation

Heat 1 tbsp of the oil in a wok or large skillet on high heat. Stir-fry asparagus and onions for 1 min. Remove from pan.
Add broccoli and cabbage. Stir-fry for 2-3 mins on medium-high heat until wilted.
Add sesame seeds; cook for 30 seconds. Add lemon peel and juice. Stir-fry for 30 seconds. Remove from pan and add to asparagus.
Add remaining 1 tbsp oil to wok; heat until smoking. Add salmon; cook for 2-3 mins on each side until golden and lightly crisp all over.
Add creme fraiche. Heat until melted without stirring. Return vegetables to pan. Toss to mix.
