Fajitas With Guacamole And Salsa - cooking recipe

Ingredients
    3 cloves garlic, crushed
    1/4 cup lemon juice
    2 tsp ground cumin
    1 tbsp olive oil
    1 1/4 lbs lamb strips
    1 None large red pepper, sliced thickly
    1 None large green pepper, sliced thickly
    1 None medium yellow pepper, sliced thickly
    1 None large red onion, sliced thickly
    8 None large flour tortillas
    None None Guacamole
    1 None large avocado
    3 tbsp finely chopped fresh cilantro
    1 tbsp lime juice
    1 None small white onion, chopped finely
    -1 None Salsa
    2 None medium tomatoes, seeded, chopped finely
    1 None fresh long red chili, chopped finely
    5 tbsp coarsely chopped fresh cilantro
    1 clove garlic, crushed
    2 tbsp lime juice
Preparation
    Combine garlic, juice, cumin and oil in large bowl and add lamb, stir to coat in mixture. Cover and refrigerate.
    To make guacamole, coarsely chop avocado over small bowl and add remaining ingredients, stir gently to combine.
    To make salsa, combine ingredients in small bowl.
    Cook lamb, in batches, in heated oiled frying pan, stirring, until browned all over and cooked as desired. Cover to keep warm. Cook peppers and onion, in batches, in same pan, stirring, until just softened.
    Meanwhile, heat tortillas according to instructions on packet.
    Return lamb and pepper mixture to pan and stir gently over medium heat until hot. Divide fajita mixture among serving plates and serve with tortillas, guacamole and salsa.
