Mediterranean Salmon Parcels - cooking recipe
Ingredients

1/2 head fennel, trimmed, sliced
1 None firm ripe tomato, sliced
1 (6 oz) thick salmon fillet, skin removed
2 tsp balsamic vinegar
2 tsp olive oil
1 tbsp fresh basil leaves, chopped
1 tbsp pine nuts, toasted
None None mixed greens, to serve
Preparation

Preheat broiler. Arrange fennel on a lightly oiled baking sheet. Broil for 3-4 mins, until softened and lightly charred. Set aside.
Preheat oven to 400\u00b0F. Cut out a large 14 inch disc of parchment paper. Arrange fennel and tomato over 1/2. Top with salmon. Drizzle vinegar and olive oil over top and season. Sprinkle with basil and pine nuts. Fold parchment paper over and twist edges together to seal. Bake for 15-20 mins, or until cooked to your liking.
Serve in the parcel with mixed greens.
