Parmesan Surprise Muffins - cooking recipe

Ingredients
    2 1/4 cups self-rising flour
    3 oz Parmesan cheese, grated
    3 oz cooked bacon or ham, chopped
    1 tbsp snipped fresh chives
    2/3 cup buttermilk or milk
    1/2 cup butter, melted
    1 None large egg, lightly beaten
    3.5 oz Camembert cheese, cut into 12 pieces
Preparation
    Preheat oven to 350\u00b0F. Grease a 12-cup muffin pan or line with paper liners.
    Sift flour into a large bowl. Stir in Parmesan, bacon and chives. Make a well in the center and add buttermilk, butter and egg. Mix until just combined. Fill muffin recesses 1/3 full with batter. Add Camembert then top with remaining batter. Bake for 25-30 mins, until a skewer inserted in the center comes out clean. Transfer to a wire rack to cool slightly.
    Serve warm.
