Chorizo And Bread Salad - cooking recipe

Ingredients
    7 oz cherry tomatoes, halved
    1 tbsp plus 2 tsp vegetable or olive oil
    3 None chorizo sausages, thinly sliced
    4 None thick slices sourdough bread, cubed
    2 heads baby Romaine lettuce, leaves separated
    1/2 cup mixed pitted olives
    1 cup crumbled feta cheese
    1 tbsp red wine vinegar
    2 tbsp basil leaves
    1 tbsp chopped flat-leaf parsley
Preparation
    Preheat the oven to 425\u00b0F. Line a baking pan with parchment paper. Place tomatoes on prepared pan. Drizzle with 2 tsp of the oil. Bake for 8-10 mins or until softened slightly.
    Meanwhile, cook chorizo in a large skillet on medium heat for 5 mins or until crisp. Drain on paper towels. Add bread to pan; cook and stir for 2-3 mins or until browned and crisp.
    Combine lettuce, chorizo, olives and feta in a large bowl. Drizzle with combined vinegar and remaining 1 tbsp oil. Sprinkle with basil and parsley; toss to combine. Serve topped with bread.
