Sweet Potato And Rice Salad - cooking recipe

Ingredients
    1 cup brown rice
    1 small sweet potato, peeled and coarsely chopped
    1 lb grape tomatoes, halved
    2 None green onions, thinly sliced
    2/3 cup fresh basil leaves, coarsely chopped
    1 1/2 oz arugula
    None None FOR THE BALSAMIC DRESSING
    2 tbsp orange juice
    1 tbsp balsamic vinegar
    1 tsp olive oil
    1 clove garlic, crushed
Preparation
    Cook rice in a large saucepan of boiling water for 30 mins, or until tender; drain. Rinse under cold water; drain.
    Meanwhile, boil, steam or microwave sweet potato until tender; drain.
    For the balsamic dressing, whisk all ingredients in a small bowl. Season to taste.
    Place rice and sweet potato in a large bowl. Add remaining ingredients and dressing; toss gently to combine.
