Leg Of Lamb With Vegetables - cooking recipe

3 1/2 lbs potatoes, peeled and chopped in half
4 None red onions, peeled and sliced
8 None tomatoes, sliced
12 stems thyme, needles removed
7-8 tbsp olive oil
1 None leg of lamb with or without bone (about 6 lbs)
3 tbsp lemon juice
1 tsp crushed red pepper flakes
8 cloves garlic, peeled
2 oz Parmesan cheese, grated
3 tbsp breadcrumbs

Preheat the oven to 350\u00b0. Put the potatoes, onion and tomatoes in a roasting pan and sprinkle with 3/4 of the thyme. Season to taste and drizzle with 3 tbsp of oil.
Rub the lamb all over with salt and pepper. Mix the lemon juice, red pepper flakes and 3 tbsp of olive oil and brush the meat with the mixture. Bind the lamb with kitchen string and cut 8 small holes with a sharp knife into the top. Put a clove of garlic in each hole. Place the lamb on top of the vegetables in the roasting pan and roast for about 3 hours.
Mix the cheese, breadcrumbs, remaining thyme and 1-2 tbsp of oil. Sprinkle the mixture on the lamb and cook for another 15-20 mins. Slice the lamb and serve with the vegetables.
