Tomato And Chipotle Chili Chicken Kebabs - cooking recipe

1 tbsp olive oil
1/2 None onion, chopped
1 None dried chipotle chili pepper
2 small tomatoes, chopped
1 2/3 lbs boneless skinless chicken breasts, cubed
None None Lime wedges, cilantro leaves, to serve
Preparation

Heat the olive oil in a medium saucepan on medium heat. Cook the onion until lightly browned. Add the chipotle chili pepper, tomatoes and 1/4 cup water; simmer, uncovered, for about 15 mins, stirring occasionally, until the chili and tomatoes soften. Cool slightly.
Discard stem from the chili pepper. Blend the chili and the tomato mixture until smooth.
Meanwhile, thread the chicken pieces onto 12 skewers. Brush with a little olive oil, and season to taste.
Heat a grill pan on high heat or preheat the grill to medium-high. Cook the kebabs until chicken is cooked through. Brush the chicken with half the chili sauce during the last few minutes of cooking. Serve kebabs with remaining chili sauce, lime wedges and cilantro leaves.
