Moules Marinieres - Mussels In White Wine - cooking recipe

Ingredients
    1 tbsp olive oil
    1 None onion, finely chopped
    2 cloves garlic, crushed
    1/2 cup white wine
    1/2 None lemon, juiced
    1 cup heavy cream
    1 lb mussels, scrubbed and bearded
    2 tbsp finely chopped parsley
    None None Crusty bread, to serve
Preparation
    Heat oil in a large skillet on medium heat. Saute onion and garlic for 2-3 mins, until onion is tender.
    Stir in wine and lemon juice. Bring to a boil. Reduce heat to low. Simmer for 2-3 mins until liquid has reduced by half.
    Stir in cream and season to taste. Bring to a boil. Reduce heat to low and simmer for 3-5 mins until sauce thickens slightly.
    Add mussels, stirring to coat with sauce. Simmer, covered, for 3-5 mins, until mussels open (discard any unopened ones). Stir in parsley.
    Serve mussels with bread for dipping.
