Sweet Potatoes With Red Onion And Feta - cooking recipe

Ingredients
    2 tbsp butter
    1 tbsp honey
    3 None medium red onions, peeled and sliced
    3 tbsp red wine vinegar
    1 1/3 cup red wine
    4 oz feta cheese, crumbled
    4 None medium sweet potatoes
    2 tbsp fresh chopped parsley
    None None green salad and sour cream to serve (optional)
Preparation
    Heat butter and honey in a pan. Add onion and cook 8 mins, stirring occasionally, until softened but not browned. Add vinegar and red wine. Simmer 15 mins until nearly all liquid has evaporated. Season with salt and freshly ground black pepper. Add feta cheese and stir well. Remove from heat and set aside.
    Microwave sweet potatoes on High for 7-8 mins until tender. Cut in half and fluff with a fork. Spoon in onion mixture. Place on a baking sheet and cook under a pre-heated broiler 4-5 mins, until the topping is hot. Sprinkle with chopped parsley and serve with salad and sour cream, if using.
