Herbed Phyllo Crackers - cooking recipe

Ingredients
    6 sheets phyllo dough
    6 tbsp olive oil
    1 1/2 tsp coarse sea salt
    3 tbsp chopped fresh thyme
    3 tbsp chopped fresh rosemary
Preparation
    Remove the phyllo from the refrigerator and let stand at room temperature for 10 mins. Preheat the oven to 400\u00b0F. Line a baking sheet with parchment paper.
    Place a sheet of the phyllo on a lightly floured work surface. (Keep unused sheets covered with plastic wrap or a damp tea towel.) Brush with 2 tbsp of the olive oil and sprinkle with 1/2 tsp of sea salt, and 1 tbsp each of the thyme and rosemary. Cover with a second sheet of the phyllo, smoothing down gently with your hands. Cut into 20 small rectangles. Place on prepared pan.
    Bake for 4 mins until crispy. Cool on a wire rack.
    Repeat twice with the remaining ingredients to make a total of 60 crackers.
