Portuguese Steak - cooking recipe

Ingredients
    1 None sirloin steak
    2 tsp clarified butter or ghee
    1 small clove garlic, chopped
    1 tbsp sherry or cognac
    1/2 cup red wine
    1/2 cup beef stock
    1 tbsp sour cream
    None None chili flakes
    1 thin slice ham
    1 tbsp olive oil
    1 None large egg
    None None mixed greens, to serve
Preparation
    Heat butter in a large frying pan over high heat. Season steak. Sear for 30 seconds on each side. Remove from pan.
    Add garlic and sherry to pan then deglaze with red wine. Add beef stock and cook for 2-3 mins. Add sour cream and cook for 1 min. Return steak to pan along with any juices. Cook to your liking.
    Cook ham in a frying pan until crisp. Remove from pan. Add oil and fry egg until over easy.
    To serve, place steak in the center of a serving plate. Place fried egg on top. Sprinkle crispy ham over egg and drizzle with sauce. Serve immediately with mixed greens.
