Ingredients

2 1/4 lbs ripe mangoes, peeled, seeded and diced
1 None green apple, peeled, cored and sliced
1/4 cup malt or cider vinegar
1 cup packed brown sugar
3 None green onions, chopped
1 tbsp raisins
1/2 tsp red pepper flakes
1/2 tsp ground cinnamon

Preparation

Place mangoes, apple and vinegar in a large heavy-bottomed saucepan on medium heat. Bring to a boil, stirring. Reduce heat to low; simmer, covered, for 8-10 mins until tender.
Stir in sugar, onions, raisins, red pepper flakes, cinnamon and salt. Simmer, uncovered, for 20 mins, stirring frequently, until mixture is thick and glossy.
Pour into hot sterilized jars and seal immediately. Store in a cool dry place for up to 2 months. Once opened, store in the refrigerator.
