Pesto, Goat Cheese And Pine Nut Turkey Breast - cooking recipe

Ingredients
    1 (4 lb) turkey saddle
    5.25 oz soft goat cheese
    3 tbsp fresh green or red pesto sauce
    1/2 cup pine nuts
    2 tbsp olive oil
    4 None red peppers, seeded, quartered
Preparation
    Preheat oven to 375\u00b0F.
    Lay turkey, skin-side down, on a cutting board. Spread goat cheese over 1 side and pesto over the other. Sprinkle with 1/2 the nuts. Fold saddle over to enclose filling and tie with butcher's twine. Transfer to a roasting pan and brush with 1 tbsp oil. Season. Roast for 1 hour, basting occasionally. Arrange peppers around turkey, drizzle with remaining oil and sprinkle with remaining nuts. Roast for 30 mins, or until juices run clear.
    Let rest for 15 mins then transfer to a warm serving platter. Serve with roasted peppers.
