Prosciutto-Wrapped Turkey Breast - cooking recipe

2 1/2 lbs turkey breast (thawed, if frozen)
6 slices prosciutto
4 None pears, cored and cut into wedges
1 tbsp light brown sugar
2 tbsp extra virgin olive oil
1/2 cup verjuice or white wine
2 tbsp butter, chopped
Preparation

Preheat the oven to 400\u00b0F. Wrap turkey breast with the prosciutto. Sprinkle with salt and pepper.
Place in oiled baking pan; cover tightly with foil. Roast for 40 mins.
Meanwhile, combine pears, sugar and 1 tbsp oil in a medium bowl
Brush turkey all over with the remaining olive oil. Increase oven to 425\u00b0F. Add pears to baking pan with the turkey. Roast for a further 35 mins or until turkey is cooked through and pears are browned and tender.
Remove turkey and pears from baking pan. Let stand, loosely cover with foil, for 10 mins. Add verjuice to pan; cook, stirring, on high heat, for about 1 min or until thickened slightly. Remove from heat. Add butter, stirring until combined.
Serve sliced turkey with pears and sauce.
