Ingredients

1/2 cup unsalted butter, melted
2/3 cup brown sugar
3 None large bananas, 2 cut into 1/4 inch slices, remaining mashed
2 cups buttermilk
2 None eggs, lightly beaten
2 1/4 cups self-rising flour
Preparation

Heat 5 tbsp butter, 1/3 cup brown sugar and 1/4 cup water in a frying pan over medium heat. Bring to a boil and cook for 2-4 mins, until a thick caramel consistency. Add sliced bananas then remove from heat and set aside.
Whisk together mashed banana with buttermilk and eggs. Place remaining sugar and flour in a bowl then mix in banana mixture and 5 tbsp butter.
Heat a frying pan over medium heat. Brush with remaining butter then spoon 1/3-cupfuls of pancake mixture into pan. Cook for 2 mins per side, until golden brown. Repeat with remaining batter. Serve with banana caramel sauce.
