Pork Tenderloin With Apples And Gorgonzola - cooking recipe

Ingredients
    1 1/2 tbsp butter
    1 1/4 lb zucchini, chopped
    3 tbsp vegetable oil
    1 None red apple, cut into 4 wedges
    1 None red onion, cut into 4 wedges
    4 None pork tenderloin medallions
    2 1/2 oz Gorgonzola cheese, sliced
    None None fresh marjoram leaves, to garnish
Preparation
    Preheat broiler. Heat butter in a large frying pan, saute zucchini over medium heat for 5-6 mins until golden and tender. Season then remove and set aside.
    Add 1 tbsp oil and saute apple and onion wedges for 4-5 mins, turning occasionally, until tender and golden. Remove and set aside. Add remaining oil, season pork and sear over medium-high heat for 4-5 mins on each side until golden and cooked through. Remove from pan.
    Return zucchini to pan, top with pork, apples, onion and cheese. Place under broiler for 2-3 mins until cheese has melted. Garnish with fresh marjoram.
