Cheesy Courgette Muffins - cooking recipe

Ingredients
    5 oz Cheddar cheese
    2 1/2 cups self-rising flour
    2 small zucchini, grated
    1/2 cup canned creamed corn
    2 None eggs, lightly beaten
    1/2 cup olive oil
Preparation
    Preheat the oven to 375\u00b0F. Grease a 12-cup muffin pan. Cut 2 oz of the cheese into 12 small cubes. Grate the remaining cheese.
    Sift flour into a large bowl. Add zucchini, creamed corn, eggs, oil, grated cheese and 2 tbsp water. Stir until ingredients are just combined.
    Spoon the mixture evenly into muffin pan. Lightly press a cheese cube into the top of each muffin mix.
    Bake for 20-25 mins until muffins are golden. Serve warm.
