Lamb Kofta With Cucumber Salad - cooking recipe

Ingredients
    1 lb ground lamb
    1 small onion, grated
    2 cloves garlic, crushed
    1/3 cup plus 1/2 cup coarsely chopped mint
    2 tsp ground cumin
    3 tsp ground cinnamon
    1/4 tsp ground cloves
    1/4 tsp ground allspice
    1 tsp finely grated lemon peel
    2 tbsp lemon juice
    1/4 cup vegetable or olive oil
    1 medium cucumber
    3 large tomatoes
    1 small red onion, thinly sliced
    None None Flatbread, cut into strips
    None None Store-bought hummus, to serve
Preparation
    Combine ground lamb, onion, garlic, 1/3 cup mint, cumin, cinnamon, cloves, allspice, and lemon peel and juice in a large bowl. Season with salt and pepper. Form 1/4 cupfuls of mixture into sausage shapes. Thread onto skewers and place on a large plate.
    Heat 1 tbsp of the oil in a large skillet or grill pan on medium heat. Cook and turn skewers for 5 mins or until cooked through.
    Meanwhile, cut cucumber in half lengthwise. Using a small teaspoon, remove and discard seeds. Thinly slice cucumber and place in a medium bowl. Cut tomatoes in half; remove and discard seeds and pulp. Finely chop tomato. Add tomato to cucumber with red onion, 1/2 cup mint leaves and remaining oil. Toss until well combined. Season with salt and pepper.
    Serve kofta with salad, flatbread and hummus.
