Ham And Asparagus Frittata - cooking recipe

Ingredients
    2 tbsp olive oil
    1 None leek, trimmed, washed, finely sliced, plus extra for garnish (optional)
    1 bunch asparagus, trimmed, sliced
    7 None large eggs, 5 whole, 2 yolks
    1/2 cup sour cream
    1/4 cup milk
    1 tbsp dill, chopped
    8.75 oz ham, finely shredded
    2 oz Parmesan, grated
    1/2 cup cranberry sauce
Preparation
    Preheat oven to 350\u00b0F. Line a 9 inch square baking dish with parchment paper, extending paper 1 inch above edges.
    Heat oil in a frying pan on medium. Saute leek and asparagus 2-3 minutes, until tender. Remove from heat; set aside to cool.
    In a large bowl, whisk eggs, yolks, sour cream, milk and dill together. Add ham, leek mixture and 2/3 of the Parmesan. Season to taste; mix well.
    Pour mixture into pan. Dollop with cranberry sauce and sprinkle with remaining Parmesan. Bake 15-20 minutes, until just set. Cool in pan 10 minutes.
    Cut frittata into slices; serve warm, topped with additional sauted leek, if desired.
