Swedish Potato Gratin - cooking recipe

Ingredients
    2 tbsp olive oil
    4 tbsp butter
    3 None onions, sliced
    5 None potatoes, peeled, cut into 1/4 inch matchsticks
    3 oz anchovies, liquid reserved, chopped
    1/2 cup heavy cream
Preparation
    Preheat oven to 400\u00b0F. Grease a baking dish.
    Heat oil and 2 tbsp butter in a frying pan over medium heat. Sweat onions until soft then remove from heat. Arrange a layer of potatoes in prepared pan. Add a layer of onions and anchovies and season. Repeat layering twice more then finish with a layer of potatoes. Dot with remaining butter.
    Mix heavy cream and anchovy liquid together then pour over potatoes until potatoes are almost covered. Cover with foil and bake for 30 mins. Remove foil and bake until golden.
