Tortellini Salad - cooking recipe
Ingredients

1 None onion, peeled and chopped
15 oz can chopped tomatoes
1 lb cherry tomatoes, halved
4 tbsp olive oil
4-6 tbsp red wine vinegar
1 tsp sugar
1 None zucchini, sliced
2 oz pine nuts
1 lb tortellini
1/3 lb cooked ham, cut into thin strips
2 oz arugula
1/3 lb mozzarella, torn into pieces (optional)
Preparation

For the tomato salad, mix the onion, chopped tomatoes, cherry tomatoes, 2 tbsp of the oil, red wine vinegar and sugar in a bowl. Season to taste with salt and freshly ground black pepper. Set aside.
Heat the remaining olive oil in a frying pan, add the zucchini and saute for 3 mins. Remove from the pan. Add the pine nuts and toast in the hot pan for 1-2 mins. Stir the zucchini and pine nuts into the tomato salad.
Cook the tortellini in salted, boiling water, according to the package instructions. Drain and rinse in cold water. Allow to cool. Top with the tomato salad, ham and arugula and scatter with the mozzarella, if using.
