Spiced Layer Cake - cooking recipe

14 tbsp butter, softened
2 cups light brown sugar
1 None egg, beaten, plus 3 egg yolks, beaten
1 1/4 cups milk
2 tbsp blackstrap molasses
2 cups self-rising flour
1 tsp baking powder
1 tsp ground cinnamon
1 tsp ground nutmeg
1/4 tsp ground allspice
None None FROSTING
1 lb full-fat cream cheese
1 1/3 cups powdered sugar, sifted
2 oz fresh ginger, roughly chopped, plus extra finely chopped to garnish
Preparation

Preheat oven to 350\u00b0F. Grease and line 3 - 9 inch cake pans with greased parchment paper.
Cream butter and sugar until light and fluffy. Gradually beat in egg and egg yolks. Add milk and molasses. Sift together flour, baking powder and spices then fold in. Transfer to prepared pans and bake for 25 mins, until firm to the touch. Let cool in pans for 5 mins then transfer to wire racks to cool completely.
Meanwhile, for the frosting, beat cream cheese and powdered sugar until smooth. Add ginger.
Spread 1/4 frosting over each cake then stack together. Decorate with remaining frosting and extra ginger.
