Roasted Garlic Chicken - cooking recipe

Ingredients
    1 None chicken (about 3 lbs)
    3 sprigs fresh rosemary
    3 sprigs fresh flat-leaf parsley
    6 sprigs fresh thyme
    2/3 lb celery, cut diagonally into 2/3 inch pieces
    2-3 bulbs garlic (about 40 cloves), split into cloves
    5 tbsp olive oil
    1/2 lb carrots, peeled and thickly sliced
    None None Toasted baguette, to serve
Preparation
    Preheat the oven to 400\u00b0F. Season the chicken inside with salt and black pepper. Stuff the chicken with the rosemary, parsley, 2 sprigs thyme, half the celery and 6 cloves garlic. Brush the outside of the chicken with 2 tbsp oil.
    Place in a roasting pan and arrange the carrots, remaining garlic and celery around it. Drizzle with 3 tbsp oil and season with salt and black pepper. Roast for 1 hour 15 min, or until golden brown and the juices run clear.
    Carve the chicken and transfer to plates with the vegetables and garlic. Garnish with remaining thyme and serve with toasted baguette.
