Shrimp Combination Noodles - cooking recipe

Ingredients
    8 oz Chinese egg noodles
    2 tsp vegetable or olive oil
    2 None eggs, lightly beaten
    4 None green onions, thinly sliced diagonally, plus additional, to serve
    1 None red pepper, thinly sliced
    1 piece (1 inch) ginger, finely grated
    1 cup bean sprouts
    1 lb frozen cooked peeled medium shrimp, thawed
    2 tbsp light soy sauce
Preparation
    Soak noodles in boiling water in a heatproof bowl for 5 mins. Stir to separate. Drain.
    Meanwhile, heat half the oil in a wok or large skillet on medium heat. Add egg and tilt to cover bottom. Cook for 1 min or until set underneath. Turn; cook for 1 min. Transfer to a cutting board. Roll up to form a log. Slice thinly; set aside.
    Wipe wok clean. Heat remaining oil in wok on medium heat. Add onion, red pepper and ginger; stir-fry for 3 mins or until pepper softens. Add bean sprouts; stir-fry for 1 min. Season. Add noodles, shrimp and soy sauce; stir-fry for 3 mins or until heated through. Divide among serving bowls. Serve topped with egg and additional green onion.
