Chocolate Brownie - cooking recipe

Ingredients
    2 None eggs
    1/3 cup firmly packed brown sugar
    2 tsp instant coffee granules
    2 tbsp unsweetened cocoa powder
    1 tbsp olive oil
    3 tbsp low fat dairy-free spread, melted
    1/4 cup whole wheat self-rising flour
    1/4 cup chocolate chips
    1 tsp unsweetened cocoa powder, extra
    2 tsp powdered sugar
Preparation
    Preheat the oven to 350\u00b0F. Grease an 8-inch square baking pan; line bottom and sides with parchment paper, extending paper 2 inches above two opposing sides of pan.
    Beat eggs and brown sugar in a medium bowl with electric mixer until thick and creamy.
    Meanwhile, blend coffee, cocoa powder, 1 tbsp water and oil in small bowl until smooth. Stir in spread. Fold cocoa mixture into egg mixture. Fold in flour and chocolate chips. Pour mixture into prepared pan.
    Bake about 25 mins or until brownie is firm to the touch. Cool in pan 30 mins. Remove from pan; cool completely on wire rack. Serve brownie dusted with sifted combined extra cocoa powder and powdered sugar.
