Homemade Coconut Milk - cooking recipe
Ingredients

10 oz freshly grated coconut or desiccated coconut
1-2 tbsp lemon juice
None None toasted coconut flakes, to decorate (optional)
Preparation

Bring 5 cups of water to a boil and allow to cool for 1 minute. Place the grated coconut in a food processor and add 1/3 of the water. Process the mixture for 30 seconds.
Place a damp cheesecloth or clean dishcloth securely over a bowl. Pour the mixture through the cloth. Return the grated coconut to the food processor. Repeat the process twice with the remaining water (re-heat the water if necessary). Stir the lemon juice into the coconut milk mixture.
Set aside to cool completely, then chill for 30 mins before serving. Serve decorated with toasted coconut flakes, if using.
