Chilled Cucumber Soup - cooking recipe

Ingredients
    2 None cucumbers
    2 None green onions, trimmed and finely chopped
    1 bunch dill, de-stemmed, some set aside for garnish
    1 clove garlic, peeled and chopped
    1 cup Greek yogurt
    1-2 tbsp lemon juice
    2 pinches ground cumin
    1 cup vegetable stock
    4 tbsp olive oil
    None None salt and pepper
Preparation
    Set 1/3 of 1 cucumber aside. Cut remaining cucumbers into pieces and puree with green onion, dill, garlic, yogurt, lemon juice, cumin, and stock until smooth. Season with salt and pepper, cover, and leave to chill for 2 hours.
    Finely chop remaining dill. Core remaining cucumber, dice and mix with dill. Put cucumber mixture in the center of each serving and drizzle with olive oil.
