400 g turkey breast, cut into strips
1-2 cloves garlic, peeled and finely chopped
4 tbsp olive oil + 2 tsp
3 tsp mixed spice or ras el hanout
300 g flour
1/2 cube fresh yeast (about 25g)
1 bunch spring onions, sliced
250 g cherry tomatoes, sliced
400 ml soured cream, seasoned
2 tsp dried parsley
200 g feta cheese
5 None green chillis, seeded and sliced
Preparation
-
Mix the garlic in a bowl with the mixed spices and 3 tbsp of the olive oil. Add the turkey strips, and stir to fully coat. Cover and leave to marinate for 1 hour.
Meanwhile, to make the pizza dough, sift the flour into a mixing bowl with a pinch of salt. Dissolve the yeast according to package instructions, then add 1 tbsp of the olive oil and gradually pour into the flour, stirring. With the dough hook of a food processor, mix until smooth. Cover and leave in a warm place to rise for 45 mins.
As the dough rises, heat 1 tsp of the oil in a pan and fry the turkey slices, turning, until they are golden brown. Remove from the heat and cool. Mix the rest of the oil with the parsley and sour cream and season.
Preheat the oven to 400\u00b0F. Transfer the dough to a floured work surface and knead vigorously. Line a 12 x 15 inch baking sheet with parchment paper and roll out the dough to fit it. Cover the dough with the sour cream mixture, then add the turkey slices, tomatoes, spring onions and chili. Crumble the feta cheese on top, then bake in the lower half of the oven for 20-25 mins. Serve immediately.
