Eggplant Pepper Rolls - cooking recipe
Ingredients

2 tbsp olive oil
1 None large eggplant, thinly sliced lengthwise
12 slices roasted red pepper from a jar, drained
6 oz fresh mozzarella, sliced
12 None large fresh basil leaves
None None arugula leaves, to serve
Preparation

Preheat the oven to 400\u00b0F. Heat the oil in a frying pan on high. Cook the eggplant slices in batches, flipping once, until tender and golden. Drain on paper towels.
Lay the slices of eggplant flat. Place 1 piece of roasted pepper, 1 mozzarella slice and 1 basil leaf on each slice. Roll and secure with toothpicks. Place in a baking dish and bake for 10 mins. Serve with arugla.
