4 large potatoes, scrubbed
3 None tomatoes, quartered
4 slices salami, cut into strips
8-12 None black olives
8 oz mozzarella cheese, sliced
2 tbsp olive oil
None None Salad, to serve
Preparation

Preheat the oven to 400\u00b0F. Prick the potatoes all over with a fork. Place on a lightly greased baking pan. Bake for 1-1 1/4 hours until the potatoes are soft when gently squeezed or when a skewer can be inserted easily into the center.
Carefully cut through the middle of each potato, without cutting all the way through. Open potatoes up. Place on a foil-lined baking pan. Fill with the tomato wedges, strips of salami and black olives. Place the cheese slices on top. Drizzle with the olive oil.
Cook under a preheated broiler for 5-6 mins until the cheese is melted and browned. Serve hot with a simple salad.
