Squid Stuffed With Feta, Parsley And Chorizo - cooking recipe

Ingredients
    1/2 cup crumbled feta cheese
    1/2 None chorizo sausage, finely chopped
    1 None tomato, diced
    1/2 None lemon, peel finely grated and lemon juiced
    1 cup fresh breadcrumbs
    1/3 cup chopped parsley
    1 tbsp chopped oregano
    6 None squid bodies, cleaned
    1 tbsp olive oil
    None None Lemon wedges, to serve
Preparation
    Preheat the grill to medium. Combine feta, chorizo, tomato, lemon peel, breadcrumbs, parsley and oregano in a bowl. Season with pepper. Spoon into squid bodies and secure with toothpicks. Brush with oil.
    Grill squid 2 mins each side. Drizzle with lemon juice. Cook another 2 mins, until opaque and well browned. Serve with lemon wedges.
