Potato, Pear And Bacon Casserole - cooking recipe

1 2/3 lbs potatoes, peeled and chopped
1 tbsp sunflower oil
1 None onion, diced
4 tbsp chopped fresh thyme leaves
2 None ripe pears, sliced
1 1/3 lbs green beans, trimmed and halved
2/3 cup milk
2 tbsp butter
1 pinch grated nutmeg
3 tbsp chopped fresh parsley
2/3 cup vegetable stock
250 g bacon
Preparation

Cook the potatoes in a large pan of boiling, salted water for 20 mins. Meanwhile, heat the oil in a large saucepan and saute the onions for 5-6 mins. Deglaze the pan with 1 2/3 cups water, bring to a boil and season. Add the thyme, then cover the pan and simmer for 10 mins.
Preheat the oven to 400\u00b0F. Add the pears and green beans to the pan and simmer for 5-10 mins. Meanwhile, drain the potatoes and mash with the milk, butter and nutmeg.
Transfer the mashed potatoes into a baking dish. Mix the parsley into the vegetables, then use a slotted spoon to transfer the vegetables into the baking dish on top of the potatoes. Pour over the vegetable stock, then lay the bacon on top. Bake for 30-40 mins, until the bacon is crisp.
