4 cups ground almonds
3/4 cup granulated sugar
3/4 cup powdered sugar, sifted, plus extra to serve
1/2 tsp vanilla extract
2 None egg whites, beaten until foamy
Preparation

In a food processor, process ground almonds and sugar until a paste almost forms. Transfer to a bowl and mix with powdered sugar, vanilla and egg whites. Form into small almond shapes and place on wire racks. Cover loosely with a clean tea towel and set aside in a cool, dry place for 24 hours.
Preheat oven to 300\u00b0F. Line 2 baking trays with parchment paper. Arrange ricciarelli on prepared trays and bake for 35-40 mins, until dry but still pale. Let cool on wire racks. Dust with powdered sugar.
