4 tbsp (1/2 stick) butter, softened
1/4 cup sugar
1 None egg
1/2 tsp vanilla extract
1 cup flour
2 tbsp unsweetened cocoa powder
2 tsp milk, approximately
48 None soft chocolate-coated mints
6 oz semi-sweet chocolate, melted
Preparation

Beat butter, sugar, egg and vanilla extract in medium bowl with electric mixer until combined. Stir in sifted flour, cocoa powder and enough milk to make a firm dough. Cover; refrigerate for 30 mins.
Preheat the oven to 350\u00b0F. Lightly grease and line 2 baking pans with parchment paper. Roll dough between sheets of parchment paper until 1/4-inch thick. Using 1 1/4-inch round cookie cutter, cut rounds from dough. Place rounds about 1 inch apart on prepared pans.
Bake for about 10 mins. Immediately place 1 chocolate mint on top of each cookie, pressing down lightly. Cool in pan 2 mins. Remove from pan; cool completely on wire rack.
Place a sheet of parchment paper under the wire racks. Drizzle cookies with chocolate. Let stand at room temperature until set.
