Chicken Meatballs With Couscous Salad - cooking recipe

Ingredients
    1 slice stale bread, torn into chunks, soaked in cold water for 5 mins, excess water squeezed out
    9 oz ground chicken
    2 None green onions, finely chopped
    1/2 cup fresh cilantro leaves, chopped
    1 None egg, lightly beaten
    1 tbsp olive oil
    None None Couscous Salad
    7 oz couscous
    1 tsp olive oil
    9 oz cherry tomatoes, halved
    1 None Persian cucumber, quartered lengthwise, sliced
    2 None green onions, finely sliced
    2 tbsp lemon juice
    1 tsp toasted cumin seeds
    None None lemon wedges, to serve
Preparation
    Combine bread, ground chicken, green onions, 1/4 cup cilantro and egg. Season. Shape into 16 meatballs. Arrange on a tray and chill for 15 mins.
    Heat olive oil in a large frying pan over medium heat. Cook meatballs for 5-7 mins, until browned and cooked through. Drain on paper towels.
    Meanwhile, to make the couscous salad, combine couscous, 1 cup boiling water and oil in a bowl. Set aside, covered, for 5 mins. Fluff with a fork to separate grains. Add remaining ingredients and remaining cilantro and toss to combine. Season.
    Serve meatballs with couscous salad and lemon wedges.
