One Pot Pork And Beans - cooking recipe

Ingredients
    3-4 tbsp olive oil
    1/4 None ciabatta, thinly sliced
    500 g smoked pork chop, cut into cubes
    1 medium onion, finely diced
    1 small red chilli, finely diced
    1 clove garlic, finely chopped
    2 x 425 ml tins of chopped tomatoes
    100 ml vegetable stock
    425 ml tin of cannellini beans, drained
    1 tsp dried thyme
Preparation
    Heat 2 tbsp oil in a large saucepan and fry the bread on both sides until golden brown. Season with salt and pepper then drain on paper towels.
    Heat another 1-2 tbsp oil in the pan and cook the pork for 4-5 mins until browned on all sides. Add the onion, chili and garlic and saute for 3-4 mins.
    Add the tomatoes and stock, give it a good stir, cover and simmer for 20 mins, seasoning to taste with salt and pepper.
    5 mins before the end of cooking, add the beans and thyme. Divide the stew into 4 bowls, break the fried bread into pieces and place on top of the stew.
